First of all, we warm the dough by adding the milk to an empty pan for the yeast. After it is warm, we add our coarse milk, sugar and packaged yeast and start the mixing process. After it swells, we add yoghurt, oil, salt and egg whites to our bowl. We start kneading our dough by adding our Berrak flour slowly. The point to note here is that our dough is neither hard nor soft. We must take care to have a consistency (earlobe) in the middle of the two.
After the kneading process is over, we stretch the dough and wait for about an hour. After our dough is ready, we divide it into small tangerine-shaped pieces. We roll out the dough that we greased and cut into pieces one by one. We add our ingredients according to our taste in the dough that we make round. You can make it with cheese, parsley or potatoes or by adding cheddar. After adding the ingredients, we cover our dough, first rub the egg yolk and then sprinkle the sesame seeds. We bake our pastries in a preheated 180 degree oven until they are browned.
